We grow Shiitake mushrooms on hardwood logs and sun dry them.  Growing on logs rather than on bags of sawdust gives them more nutrition and better flavor, much the same as a chicken grown outdoors is better than a cage-raised chicken.

Sun drying allows for an incredibly high level of vitamin D in each mushroom.

Taken together, these factors make our Shiitake mushrooms something you just can't get anywhere.

Once dried, the mushrooms can store well for months, and can be re-hydrated at any time by dunking them in a bowl of warm water for 10 minutes.
